Stuffed mushrooms with mozzarella, olive oil, and spices.

Along with the deviled eggs, I made stuffed mushrooms to take along today. Stuffed mushrooms make a nice appetizer or some finger foods.

You will need:

  1. Mushrooms (preferably large – around 2″ across).
  2. Parsley
  3. Mozzarella Cheese (comes in a bag with water and preferably the cheese balls).
  4. Salt
  5. Pepper
  6. Olive Oil
  7. Chilly Powder

Take the mushrooms and holing it upside down in your left hand, push the stem to the side and back with the other hand. You should hear a ‘pop’ and the stem should come out.

Set the mushrooms on a plate.

Add a mozzarella balls (or cut piece) in the stem hole.

Fill the hole with olive oil till it comes almost to the top. of the stem hole.

Sprinkle a pinch of salt on each one.

Sprinkle a pinch of chilly powder (not red pepper unless you like spicy) on each one.

Add one twist of black-pepper.

Put the mushrooms in the microwave for 90 seconds. Check, if the cheese is melted – take them out. If not, add 20 seconds and check again. / You can also cook in an oven for 8 minutes if you have one. Check, cook until cheese is melted.

Place the mushrooms on the serving plate.

Add a parsley sprig to the top of each one.
